- 500g large shrimp, peeled and deveined
- 52ml olive oil (2 tablespoons + 50ml for sauce)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 100g blanched almonds
- 2 cloves garlic
- 200ml water
- 1 tablespoon vinegar
Instructions
- In a bowl, combine the shrimp with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Let marinate for 10 minutes.
- While the shrimp is marinating, prepare the ajoblanco sauce by blending the almonds, garlic, water, 50ml of olive oil, vinegar, and 1/2 teaspoon of salt until smooth.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto skewers, alternating with pieces of cucumber and bell peppers.
- Grill the skewers for about 2-3 minutes on each side, or until the shrimp are cooked through.
