- 400g chicken breast
- 1 tsp Cajun seasoning
- Salt and freshly ground pepper
- Oil
- 1 pointed cabbage
- 1 cucumber
- 3 spring onions
- 75g spinach
- 1/2 bunch chives
- 2 cloves garlic
- 1 avocado
- Juice of 1 lemon
- 40g grated parmesan
- 3 tbsp olive oil
- Salt
- Water
- 4 sandwich breads
- 4 slices cheese
- 1 handful spinach
Instructions
- Add the ingredients for the dressing to a blender and blend until you have a creamy dressing. Adjust the consistency with water and season with salt.
- Finely chop the cabbage into small squares. Dice the cucumber and slice the spring onions. Mix well with the dressing and set the salad aside.
- Halve the chicken breasts to create two flat fillets from each piece. Season with Cajun seasoning, salt, and freshly ground pepper.
- Heat a splash of oil in a pan and cook the chicken until golden and cooked through. Shred the meat.
- Warm your sandwich breads, preferably in a panini grill, with the cheese in between. Fill them with the salad, seasoned chicken, and fresh spinach. Serve with the remaining salad on the side.
