  • 2 medium sweet potatoes, peeled and cut into 1-inch cubesPotato
  • 1 medium onion, cut into thin wedgesOnion
  • 1 pork tenderloin, about 1 poundPork

Instructions

  1. Preheat oven to 375°F.
  2. Mix brown sugar and seasonings in a large bowl. Reserve 2 tablespoons.
  3. Add sweet potatoes, onions, and butter to the bowl; toss to coat well.
  4. Arrange on a large, shallow, foil-lined baking pan sprayed with no-stick cooking spray.
  5. Roast for 10 minutes.
